Fusionando la exquisitez de la gastronom\u00eda japonesa con los sabores tradicionales de Ecuador, No\u00e9 ha logrado crear una experiencia gastron\u00f3mica \u00fanica y cautivadora.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Nacido en Cariamanga, provincia de Loja, No\u00e9 caminaba dos horas para ir a la escuela. Trabaj\u00f3 siempre en sus vacaciones, en la cocina de los restaurantes. Supo cocinar y limpiar desde muy peque\u00f1o. Eran diez hermanos en su casa campesina, y a todos ellos su padre dio la tarea de ayudar en la cocina durante una semana. Fue la experiencia que le ayud\u00f3 para toda la vida. No\u00e9 era el primero de sus hermanos y nunca dej\u00f3 de ver por ellos, ahora siete trabajan junto a \u00e9l en la empresa.\u00a0<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Su pasi\u00f3n temprana por la cocina lo llev\u00f3 a trasladarse a Quito para perseguir su sue\u00f1o. Comenz\u00f3 su carrera en diversos restaurantes locales, y su formaci\u00f3n profesional m\u00e1s significativa ocurri\u00f3 en el restaurante Tanoshi de un hotel reconocido de la ciudad, donde perfeccion\u00f3 las t\u00e9cnicas de la cocina japonesa bajo la gu\u00eda de chefs expertos\u200b. En 2004, No\u00e9 fund\u00f3 su primer restaurante en Cumbay\u00e1, combinando sabores ecuatorianos con t\u00e9cnicas japonesas. Este concepto de fusi\u00f3n fue un \u00e9xito rotundo, permiti\u00e9ndole expandir su negocio a m\u00e1s de 40 restaurantes en Ecuador, y ahora con planes de expansi\u00f3n internacional, No\u00e9 comenz\u00f3 por Miami y muy pronto en Europa. Este paso forma parte de su visi\u00f3n a largo plazo de llevar la cocina ecuatoriana-japonesa a un p\u00fablico global, promoviendo los sabores y la cultura de nuestro pa\u00eds.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\"><em>\u201cCreo firmemente en que, si entregamos productos con prop\u00f3sito, perfecci\u00f3n, belleza, y arte; los comensales volver\u00e1n al restaurante.
